Words from the Wire: Our June Must-Haves
June had our forks, spoons and coupes clinking with delight! Our culinary journeys brought us all over SoCal and Baja this month, and we’re savoring the flavors and currently plotting out July.

Matsu: The stand out 5th course at Matsu’s new 6-course tasting menu is the surprisingly ultra-rich anago (saltwater eel) with goma dare (sesame sauce).
Cardellino: The already perfectly presented (and portioned) Spinach and Sausage Lasagna with mornay made it easy to savor this dish over multiple days.
Jeune et Jolie: In light of the global Chartreuse shortage, the bar team at Jeune et Jolie decided to take matters into their own hands and came up with a house recipe designed to recreate the flavor and color of Green Chartreuse. In honor of and with respect to the Carthusian monks, they are keeping their house recipe close to the vest/chest. I’ve tried it neat and it’s a delicious interpretation.
Bivouac: The delicious Meze Platter and the Buffalo Fried Cauliflower at Bivouac paired perfectly with a few pints of Albright (dry pear cider).
Two Ducks: The new Two Ducks pop up from the Brothers Romero (formerly of Wormwood) took my breath away. Course three was the Sope Tart with fiddlehead ferns, morels and a crème fraîche beurre blanc. Equally impressive was the plate it was served on.
Hokkaido Bread Company | I was spoiled with a special Milk Bun Cinnamon Roll one morning at a video shoot, and I tore through it like a wolverine.

From Mister A’s, the Hiramasa Crudo complete with Citrus Broth, Chili Oil, Avocado, Garbanzo, and Taro Chip.
From Parker Palm Springs, Norma’s serves up Pancho’s Crispy Fish Taco with Chipotle Salsa on the backdrop of the brightly colored open-air Terrace.

‘Tuétanos a la Leña’ at Club H, the restaurant inside Caliente Casino, Tijuana. The smoky, tender bone marrow is roasted over open flames, unveiling a velvety texture and served over handmade tortillas de harina.
